Apple bliss balls or logs [nut free, refined sugar free]

dried apple chips
seeds (we like a mix of pepitas and sunflower seeds)
desiccated coconut (for rolling)
Place all ingredients (except for coconut) into a food processor and blitz until fully incorporated but not totally smooth (you want a bit of texture).
If you have a small processor, don't overcrowd it - start with the dates and once they are blitzed, add the apple chips, then blitz those, and then add the seeds and sultanas in turn.
Roll mixture into balls or logs and roll in the desiccated coconut to coat.
If making logs, pop them into the fridge for an hour or two before cutting into pieces - it will be easier.
Store in the fridge.
The balls or log pieces will last about a week in the fridge. They're perfect as a little healthy treat for kids' lunch boxes.
