Place all seeds in a food processor and blitz until the mixture resembles fine breadcrumbs.
Add the dates and pulse a few times until the dates are finely chopped and mushy.
Add the rest of the ingredients and blitz until the mixture comes together.
Working with about a tablespoon of the mixture at a time, roll each tablespoon into a ball and roll in coconut or hemp seeds.
Store in the fridge for up to a week.
