splash of milk(full cream cow milk, or almond milk are our favourite but use whichever milk you love)
1tbspmaple syrup(I used the Kirkland maple syrup from Costco - but use whatever brand you like)
1/2apple, grated(including skin)
handful of craisins (optional but recommended)(I use these OceanSpray reduced sugar craisins)
handful of pepitas (optional but recommended)(pumpkin seeds)
handful of flaked almonds (optional but recommended)(I have a big bag of these Freshlife flaked almonds in my pantry and love love love them - they stay fresh for a long time)
Place the oats and the water in a microwave proof bowl, mix and microwave for 1 minute 40 seconds on high.
Once the microwave beeps, pull the bowl out of the microwave, add the milk and mix until combined.
Place the bowl back in the microwave and cook for further 20 seconds on high. (This is optional - if the oat mixture doesn't look too runny after you mix the milk in, sometimes I skip this step. It's up to you - if you don't microwave at this point, the milk cools the mixture down and you can eat it faster. But if you add too much milk, more microwaving helps absorb the milk.)
Take the bowl out of the microwave and mix in the maple syrup, the grated apple and cinnamon.
Throw in handfuls of craisins, pepitas and almonds, if using.
Sprinkle a bit of cinnamon on top and dig in!
This recipe makes one medium sized portion. If you feel hungry, use 1/2 cup of rolled oats and 1 cup of water. Feel free to increase the portions, as long as you keep to the 1 part rolled oats, 2 parts water ratio, you should be fine. Increase the other ingredients accordingly.
